Executive Sous Chef For Luxury 5* In Cork


Great opportunity with this five star resort for an Executive Sous Chef who will assist the Executive Head Chef in the management of the entire kitchen & team including overall culinary operations, training & supervision of staff, and monitoring food quality as well as overseeing the Pastry section on a day to day basis. Must demonstrate fluid expertise with all related responsibilities: F&B standards and legislation (HACCP, sanitation and hygiene, quality control…) Budgets, food and labour costs. Ensuring quality and consistency of food (photos, recipes, training…) Food store and stock management. Management of food orders through Micros. Weekly rosters, timesheets, holidays. Training of junior chefs, including preparing departmental training manual. Staff appraisals. The ideal candidate will have a minimum of three years’ experience at Senior / Executive Sous Chef level of a large five star property with extensive C&B and Pastry experience. Must a be polished hospitality professional with a constant focus on creating a fabulous dining experience from start to finish.
