This is an all-day operation serving Breakfast, Bar Food and Nightly Restaurant Food approx. where they serve a busy passing trade as on a main route. Style of food could be classified as Bistro/Brasserie Traditional & classics serving 150-300 covers daily so a Head Chef with strong Hands on Kitchen experience is required. The main emphasis is on quality Bar Food and Restaurant. The client will also look at a strong Sous Chef seeking their first Head Chef Position. Prerequisites for this position include: Previous 3 years as Head or 5 years as Sous Chef experience. Previous 3*/4* Hotel or Quality Restaurant experience. Bistro/Brasserie/Bar Food type operations. Strong on Costings, Portion Control & Purchasing. Fully au fait with HACCP & Food Safety Regulations. A chef that can bring new ideas, new dishes, new menus, specials to the property. A chef dedicated to producing wholesome food with great taste and funky presentation. A problem solver and can think ‘outside the box’ Strives for perfection while executing excellent cuisine.
